Who else loves Mexican inpired food? We’re big on it here in the lost world. In fact, we celebrate Taco Tuesday each week. We don’t necessarily eat tacos, but there’s always some Mexican yumminess on our menu every Tuesday.

I was feeling inspired by all the great recipes I found on the Del Monte Tomato Kick-Off Sweeps Pin Board so I decided to get a bit creative with a can of Del Monte® Petite Cut® Diced Tomatoes with Chipotle Chilies. I took the easy road and simply diced a package of Gardein Chick’n Scallopi (faux chicken) sauteed them in a bit of olive oil, added a can of rinsed and drained black beans and the can of diced tomatoes. I seasoned them with a little salt, pepper and cumin and served it over Jasmine Rice. Easy Peasy and took about 10 minutes! Talk about a no brainer and it was as yummy as could be. No leftovers here!

An easy way to use the new Del Monte® Petite Cut® Diced Tomatoes with Green Chilies is to turn it into salsa. Simply add a diced onion, a diced green pepper and as much chopped cilantro as your family likes, cover it and let it rest in the fridge overnight. Break out the tortilla chips, your family will never know you started with canned ‘maters!

    This easy peach sorbet. I am going to try this out tomorrow. Already placed some canned peaches in my freezer- and they were Del Monte brand too. I love sorbet but didn’t know you could make it without something like an ice cream maker.
