I’m a fraud. A fraud with a good heart, but a fraud, nonetheless. When invited to have coffee with some girl friends a couple of weeks ago, I volunteered to bring muffins, then promptly forgot all about it!
The morning of the coffee klatch arrived and there I was…muffin-less. What’s a gal to do? I’ll tell you what I did…i opened the freezer and grabbed a package of Udi’s Gluten Free Harvest Crunch Muffins and a pack of Dark Chocolate Brownie Bites, arranged ‘em on a pretty plate and out the door I went!
The disaster of my absent-mindedness was averted and I was hero bearing goodies! The girls raved and raved while I basked in the glory of a job well done!
I did finally let them in on my guilty secret (but only because they were asking for my Harvest Crunch Muffin recipe) and they were amazed that gluten free could be so delicious!
My friend, Mel, was encouraged, though. She’s been having some issues that prompted her doctor to urge her toward a gluten-free diet but had been putting it off because of the bad rap so many gluten-free products have gotten. Now she knows that she needn’t give up yumminess for her health!
Lots of people are finding that they feel better on a gluten free diet, and not just the people who have Celiac Disease or a sensitivity to gluten, either. Folks report increased energy levels, as well as a better ability to focus. That tired slump after eating lunch? For many that “over-full” bloated feeling disappears after going gluten free. Gluten tends to be hard for your body to digest, which causes that feeling of tiredness. So when you avoid gluten, that excess energy can be diverted elsewhere, rather than your digestive system.
The biggest reason to go gluten free, is that there’s simply is no downside to giving it a shot (provided proper nutrition is maintained). Who knows, you might feel better than you ever imagined possible!
